I received a free HighKey Muffin & Cupcake Baking Mix, which I had asked for. The reason being my husband is diabetic, and I have friends on the Keto diet. I thought I could make a batch, and share between them all.
You will need the package, 4 eggs, 1 tablespoon unsweetened almond milk, and 1/3 cup of coconut oil. You mix all the ingredients together, apart from the coconut oil to begin with, and then the oil at the end. That simple.
Once they are in the muffin tins, and the oven on at 375, they should be ready in 13 – 14 minutes.
You will get 10 g of fat, 5 g fiber, they are gluten and grain free. For the Keto diet the figures are 14 g total carbs, 5 g dietary fiber, 8 g erythritol & allulose = 1 g net carbs. As I do the diabetic diet for hubby, they were the figures I was looking at. Calories 120 per muffin.
So if you are on the look out for a nice treat, snack, breakfast, dessert, this could be the one for you. I am not on a diet so didn’t get to try one.
