On the occasional visit to Denny’s I have my eggs over easy, because restaurant scrambled eggs are hard, just like an omelet.
I whisk my eggs with a little milk, have a low fat spread hot in the pan, and pour in my eggs. I then constantly whisk them while cooking.
They are so light, airy, and taste really creamy. We had ours with sausage, baked beans and toast.
I know what you mean π. Adding milk makes the eggs fluffy.

My eggs always turn out soggy. Must be putting too much milk in!! Your suggestion of less milk seems to be the answer.

Home made is always better! Scrambled eggs (and omelettes) should be soft and pillowy.
