I buy my turkey the week before Thanksgiving when it is on sale. My 20+ lb. turkey then goes in the freezer, until the weekend before our Christmas week at the beach.
So it’s now thawing, and I will cook it once it is completely thawed out. It will either be Saturday or Sunday. We have a roast dinner, and then I will break it down, and freeze a whole turkey breast for Christmas day.
This has been my tradition for the past 11 years, since hubby had the cerebral hemorrhage, and brain tumor, Since then I haven’t visited my family in England, so chose Christmas week at the beach as a gift that keeps giving.
