I have been looking at Convection Countertop Toaster Ovens on Amazon. When I made the cauliflower cheese I put the regular oven on, and only had one item in it. I do have a microwave, a small toaster oven that is the perfect size for 2 slices of toast, and a wide slot toaster.
The one I am thinking of buying can take a tray/dish up to the size of 9 x 13 inches. My cauliflower cheese would have fitted in with room to spare.
Cooking for one is impossible for me, The cauliflower cheese did me 3 meals, and one for my neighbor. It seems so strange, after cooking for family in England, owning a restaurant, and cooking in bulk, just comes naturally to me.
My freezer, and cupboards are full of food, that’s why I have only bought fruit, vegetables, and milk this week. It takes a bit of getting use to.
I always bulk cook with spare portions going in the freezer for unanticipated guests or when I can’t be bothered to cook.

I like those kinds of ovens over having to use the stove, and/or a microwave. Some say they use less electricity, too…

I will make too much so thought this would stop me making in bulk.

I cook 20 portions. Hopefully this will be 4-6 😊

Seriously. I would cook for 25 when we lived in England. I did Christmas and Easter, the 3 of our, my parents, my brother and his wife, Len’s 3 daughters, their husbands, and families, Len’s Mum, and also friends that would eat on their own.
