I bought fresh salmon earlier this week, and will never buy frozen again. I cooked it in the convection oven, with butter, and only 2 – 3 minutes a side. I was watching constantly. I added black pepper, as the butter was salty. It tasted superb.
I will never have it in restaurants either, because I paid $12 for a salmon meal that was overcooked, and very dry. I can buy it from the fishmongers department in Winn Dixie, and get 4 ounces, each time I want to have it for dinner. Cheaper, and cooked exactly how I want it.

Looks good. I would have potatoes with that meal though. It’s the only way I like peas – mixed in with mashed potatoes. I think it’s a Southern thing.

I’m a meat and potatoes call. That’s how I grew up and I really do love potatoes just about anyway they are fixed.

It’s hard when they are sick and you try everything, but nothing is good to them. Glad you are doing the things that make you happy now. I’m sure he would be pleased.
